I second the Big Nerd Ranch recommendation—great people and great course.
The only caveat is that you really have to be ready to use what you learn immediately, at least part-time, or you'll lose it.
I took the course about 3 years ago, and had to restart almost from scratch when I started serious Cocoa development earlier this year.
