Where I have control over the window's font properties, I have light (white or near-white) text on a dark (not black, charcoal - need to be able to see an I-beam) background. Darker than Gruberville but that's still quite a relaxing scheme. I found that if I try to read too much in a black-on-white window, it ends up not only hurting but I lose concentration. I can only use the white-on-black mode of Universal Access for so long too, because the icons in the Dock or OmniWeb's tab view go all funky which is distracting.
